what to do with all the red wine in your cabinet now that you’re alcohol free

i had a bunch of red wine in my cabinet from my house warming part 2+ years ago. i obvi will not be drinking it, but i felt weird gifting it. i don't have any problems pouring alcohol down the drain minus the smell, but for some reason that didn't feel right either. then i thought: vinegar.

i opened a few bottles, emptied them into a giant glass bowl and let it sit - it needs oxygen.
after 30 min i poured the wine into my giant fermentation jar
added 2 cups of Braggs Apple Cider Vinegar and one of my kombucha scobys

place in a cool, dark, ventilated space and let it ferment for 3-4 weeks. i honestly have no clue how long i left mine out for woops.

my white wine vinegar experiment did not go so well- i found blue mold on top of the scoby last week :( i cant wait to try again- i have a bottle of champagne i would very much like to turn into vinegar. i'll need to research how the bubbles impact the process
